Peanut Butter Cookies with Chocolate Truffles
The heart of every Chocolate Peanut Butter Cookie is the Lindt (Lindor) Chocolate Truffle. I like the soft and creamy centers, but you can choose any chocolate truffles that you buy from the grocery store you like the most. Be sure to measure them approximately an inch in size.
I made a recipe for peanut butter cookies and formed them into balls. Then, I baked the balls for 10 minutes, or until they formed domes. Then I rapidly pressed a cavity into each baking before baking throughout the process. This gives them a unique round crackly shape that’s ideal for Halloween.

After the cookies are cooked and nearly cool to the point of adding a truffle in each of the cavities. Make sure that the cookies are slightly above room temperature so that it melts enough to stick to the biscuit. It isn’t a good idea to let it melt completely.
Then, pipe chocolate legs onto then the chocolate peanut butter spider cookies in order to create them appear like spiders. All they require is eyes.
If we were to be precise, we’d be adding an additional eight eyes… however, I think they’re better with two eyes.

- Chocolate truffles I chose Lindt Truffles. But you can make any chocolate truffles that you like.
- Chocolate chips that are semisweet to pipe the spider legs.
- The candy eyes are available in the cake decorations section of many grocery chains.
Ingredients

- 1/2 cup butter that is unsalted softened
- 3/4 Cup delicious peanut butter
- 1/3 cup brown sugar
- 1/2 cup Sugar granulated
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/4 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tablespoon salt
- 24 chocolate truffles in around (I made use of Lindt Truffles)
- 3/4 cups semisweet chocolate chunks
- 48 eyes that are candy
Instructions
- Preheat the oven until 350° F. Place two baking pans with parchment and put them aside.
- Put the softened butter and peanut butter together in the mixer, and beat until they are fluffy. Add the sugars and mix until the mixture is fluffy. Scrape the bowl, and then beat with the egg and vanilla.
- Separately, in a bowl, mix the flour baking soda, baking powder, and salt together. Set the mixer to low to blend the flour mixture.
- The dough for cookies should be rolled into 24 1 1/2 tablespoon-sized pieces and put 12 of them across each baking sheet. Cook for 10 mins. Remove the cookies from the oven. Use a pestle quickly to create a cavity within the middle of each cookie. Place them back into the oven for another 6 to 10 minutes, or until they are golden.
- While you’re at it, take out all chocolate truffles. After the cookies have come taken out of the oven, allow them to cool close to the temperature of the room (but not extremely warm) and then place one truffle inside the inside of each cookie. In the event that the cookies become too hot, they will melt the truffle. When the cookie is cold and the truffle isn’t sticking, it won’t be able to stick. (You may also hold off until your cookies are cool and then stick the truffles with chocolate to ensure safety.)
- In the microwave, melt the chocolate chip for 30 seconds in intervals, stirring between until the chocolate is smooth and melted. Pour the chocolate that is melted into the zip bag. Close the bag, and cut off a tiny portion of the corner to make an opening. Pipe eight legs onto each cookie, beginning with the truffle’s body and working and working down.
- Then, use the remaining chocolate to attach 2 eyes to each spider. The chocolate should cool until it becomes firm enough to serve.
